2 pounds dried figs 2 cups sugar ¼ cup lemon juice ⅓ cup water
1. Mix the figs and the sugar together in a big pot.
2. Mix in little water and lemon juice. Bring to a boil while heating over medium heat.
3. Bring the temperature down to a simmer. Continue to simmer for 20 to 25 minutes, or until the mixture has thickened.
4. Allow to cool, then transfer the contents to jars. Store in the refrigerator for up to three months.
